More than 2-page Pages templates?

I've been looking through the template browser on Pages, and I see multiple pages on the previews. However, when I open one up into a document, I get only 2 of the pages from the previews. 😡
Any ideas how to get the other pages?

Go to the menu bar > Insert > Pages (page layout) or Insert > Sections (word processing).
