If I were to buy a Mac Mini, but use a standard mouse and kb.... would I be missing out on anything major by not having the apple mouse and kb? Any functions that I wouldn't be able to use without the apple kb and mouse?

You really don't need the Apple mouse (any of them). I get more functionality and comfort from the Logitech Performance MX. As for the keyboard, you might want to get the Apple one, so that it has all the necessary functions for OS X. But there may be other compatible keyboards available - I've never looked because I like the Apple keyboard.

You wouldn't really be missing anything. I highly suggest, though, that you at least take a look at the gestures that are supported in Lion. If you think they appeal to you, try a Magic Trackpad.
