My iPhone (5, 16GB) currently has 3.8GB of space being taken up by messages, but I don't want to delete them, I'd much rather back them up to an external source such as my Mac, are there ways of doing this that people can recommend?

Not knowing your setup... The messages on my iPhone are synced to my iMac via iCloud so that I have an exact copy of every message received. You can do the same.
 
I set my email account(s) to IMAP that way what I do on my iMac happens on my iPhone. It's pretty neat and I actually find it easier checking my email on my iPhone than my Imac for some strange reason. I believe the email is stored on the email server until deleted, but I could be wrong.
