RAM can always be added later and with the apps you're running i see absolutely no reason in getting 8GB.
I do have Safari/FF/iTunes/Word/Excel/iCal/Mail + VmWare running all day and I don't have much pageouts.
Check activity monitor after a day of work on your computer, if you have more than 20% pageouts (compared to pageins) you'll want more memory, but if you're under 10% you won't notice anything at all
