So, I have a 2-screen setup. In windows I can disconnect one and it automatically switches to a 1 display setup. When I do this on the Mac Studio it keeps a phantom display, and I can't click on anything because the apple logo and system preferences is on the other screen. Is there a way around this or a key combination to switch manually. The purpose is sometimes (very rarely) we need to use all 3 machines in the office. In that instance I have a separate KB/Mouse off to the side, I just want to steal one monitor.
 
If you physically disconnect the cable from the Studio it should resort to 1 display.

I have 2 connected to my Studio permanently, 1 is ALSO connected to my Mac Pro, so I can change the input on the display if I need direct access (via a screen) to my MP, which is generally accessed via screen sharing.
 
I've physically disconnected it, and it still acts like two are connected with the menu bar offscreen.
 
Simply hit cmnd-F1, mirror displays, all elements collapse to show identically on all displays, whether they're on or off.
