Apps don't run in the background, so don't worry. When you exit an app, they get put on hold (games pause, other apps remember where you left off). if you have too many apps opened, the OS will automatically close off apps to keep your iPhone running smoothly.

I've been using Pandora + Angry Bird (game) + Safari + E-Mails and have yet to see a slow down.

Most Apps are built for iOS 3.x and, as such, do not go to the background. So there is nothing to worry about there.

Apps that are built for iOS 4 may consume resources when in the background.

In the simplest case there is also no reason to be concerned, because Apps are 'frozen' -- not running, but in RAM. There is no battery penalty for simply being in RAM, but this facilitates 'Fast Application Switching' in other words it makes it quicker to open the App.

Apps that multi-task do so under strict limitations, streaming radio for example will obviously use more battery than a location-based App that uses cell-towers. There is good information available at: http://www.apple.com/iphone/features/multitasking.html
