After upgrading to iOS5, my whole music collection is super loud. Even when playing a song at the lowest possible volume, putting the counter as close to mute as possible, it still blares in to my ears.

Is there a way to tone down the volume of this music? Any way I can decrease the starting volume of music in iTunes?

**I have checked this music using two pairs of headphones and they sound loud in both.

TIA

You can also go to iTunes and go to the playlist on your phone,
Right Click -> Get Info -> Option (on top), and you can adjust the volume.
(This is using a Windows computer, I am not sure if Mac is the same process but the options should be there).

Hope that helps!

edit: Since you mention your whole playlist is like that, you can shift click all the music and right click to change all the volume at once.
