Hi to everyone, I have the Airpods and I don’t know what stream music aplication to choose? I want mainly quality listening.

Any music player will do. The chances of you noticing the difference between Apple Music, Google Music or Spotify is pretty slight. Allegedly Tidal has the best streaming quality although I've never used it myself and it's long term future still looks murky.
