I was very surprised by this. Does that mean that Apple are doing more assemblies in the US, or could it be that they've upped their QC regimen to inspect all iMacs at home base before sending them out?

They do assemble some iMacs in the US. Once it arrives, it will be stated on the box and on the bottom of the stand of the actual iMac where it was assembled :)
 
Mine too; everything other refurb product I have gotten came from China, my iMac from California.

Also, the country of manufacture can be decoded by the units serial number
 
Some are now assembled in the US yes, but it's a very small proportion...Out of curiosity I just checked my new 2012 27" box..."Assembled in China" I think some assembly is now also carried out in Eire ( Ireland ) but the bulk of the work is still Chna based, and I wouldn't expect that to change.
