my application fonts have all gone crazy

safari changed, i cant change it back - the bar in widgets is all different, mail lists everything differently - i dont know what happened. But how do i reset the default fonts on the mac?

Get TinkerTool, go to the fonts and reset the default fonts. Also, make sure you don't have any programs that change font, such as Silk.
