Straight from the Pages help files...


To change the spelling dictionary for selected text:

1. Select the text for which you want to specify a new dictionary.

2. If the Inspector window isn't already open, choose View > Show Inspector.

3. Click the Text Inspector button, and then click More.

4. Choose a dictionary for the selected text from the Language pop-up menu.

Choose All to check spelling using all dictionaries; choose None to turn off spell-checking for the selected style.
