What's the app called to change the name of the carrier so instead of it saying Telstra it will say Joe's iPhone instead I had this a on my phone a few years ago and can not remember what it was called.

I use this. It supports ios5. MakeItMine just crashes as soon as I open it. I'm on a 4S 5.1.1.

Not really, but why don't you give BBSettings a shot?
I did and never used SBSettings again.
Oh and it can also change Carrier name.

Same here. I was told to get MakeItMine but it wouldn't open without crashing instantly so I found Fake Carrier, works great.
