Stocks. Annoying that it can't be removed. The compass is pretty useless as well. The only time you'd need a compass, the battery wouldn't last long enough for it to be worth anything.

I kind of liked the Compass, I was thinking it might come in handy one day, when you need to...umm

I have too many apps that I really never use, but I keep "just in case" (or because I can't delete them o_0).

I find compass handy when I've gotten off trimet's train and need to go east.

Don't use: stocks, newsstand, voice memos, game center
While there's probably a way to hide it via jb, it's not worth the effort. I put them in a folder (except stupid newsstand) and voila! See no evil. :D

There's a JB to hide Newsstand. Why that icon cannot be put into a folder is beyond me.
 
Siri - if you class that as an 'app'.

If not, 'Videos' - Because I never buy any videos off iTunes, nor do I store them in iTunes.

Several of the apple apps I don't use. I try to make it a point that any app I have on my phone or iPod is used. I hope someday apple gives the option to at least hide their apps.
 
There's a JB to hide Newsstand. Why that icon cannot be put into a folder is beyond me.

You can put Newsstand into a folder without jailbreaking. Just create another folder and while that folder is forming, quickly drag Newstand into the folder. It's not a permanent solution (sometimes syncing your iPhone with iTunes will undo it), but it keeps Newsstand out of sight most of the time.

Anyway, I'm voting for Stocks as well.
