What is it called when a client wants to have the following...
- new logo, business cards, envelopes etc.
- new advertisement design
- new newsletter design
- placing the new logo to all products...
Personally i would call it a corporate identity redesign... but im not sure that this term would be correct.
Do you have anything else in mind?

I would call that a rebranding project.

Has anyone of you ever done such a project?
I have participated in and performed a handful of projects like this. They can range from simple visual refresh of the brand presentation (new logo applied to existing marketing assets) to a complete identity redesign (revised strategic messaging driving new tagline, logo, style guide and revision of marketing assets).
