Hey guys.
I’m looking to buy a new Apple Watch. I want it to track my workouts, get notifictions and get motivated with the rings.
Feature wise, the s3 looks like it’s the best for my uses but every where I look the reviews says do not buy it since it won’t get support any longer and that’s my only concern.
but if Apple still selling it this year, that’s really an option they will ditch it next year and the year after that?
is there a past case when they sold a product and then no longer supported it the next year?

My series 3 still works really well. Go for it!

They will still support the watch for years to come, but next year it might not get the latest operating system. Doesn’t matter though for the features you want. I use mine for workout tracking and text message notifications.
 
Depends on how much you want to spend. I prefer the larger screen and would choose the 5 or SE.
 
If the current set of features is what you want then go for it. I think its great for sports tracking, especially smaller 38mm version which doesnt get in the way. No one here can tell you for how long Apple gonna support it with software updates. Apple does separate builds for each watch model and each build seem to be compiled with specific features its target can handle so technically they can keep it going as long as they like.

The 3 GPS will do exactly what you want, but you already know that. Apple's not going to drop support any time soon. See below which was taken from there website under the watch. I'd suggest AppleCare.

Apple Fitness+ requires Apple Watch Series 3 or later with watchOS 7 or later and one of the following Apple devices: iPhone 6s or later with iOS 14 or later, iPad with iPadOS 14 or later, or Apple TV with tvOS 14 or later.2
 
Don’t buy the S3. The SE is the better value offering upgraded performance, longer support and the price is just more sensible when you consider your options. The only reason the S3 would offer a core difference, is if you wanted a stainless casing for example, which the SE is only aluminum.
 
My $0.02: get the SE. I bought the S3 in late July as a trial. Coming from a FitBit Inspire HR, I wasn't sure how much of the AW feature set I'd use. Turns out the answer was "a lot" and I quickly became a AW devotee. While the S3 will still fit the bill, the SE has a bigger & better screen (42mm S3 vs 44mm SE), faster chipset, supports more watch faces, apps, and complications. For a bit more money, I think you get a much better device, not to mention more viability going forward.

Just because Apple stops selling a product does not mean that they stop supporting it for iOS upgrades. For example they just stopped future iOS upgrades for the iPhone 6 last year many years after they stopped selling it.

I still have my Series 3 but I have the GPS + Cellular model that has 16 GB vs only 8 GB of the base Series 3. It is often a challenge to upgrade to watchOS 7 for many customers due to limited free storage space. I would be more concerned with the Series 3's 8 GB of storage going forward.
