I'm looking for an application that can index and search through over 6,000 PDF documents, which total over 80 GB of data. I need to be able to keyword search the contents of these files.

I tried PDF Stacks and the only thing that program did after importing that much data was crash. I also tried Calibre but that application can only search metadata fields.

You should try out DevonThink Pro.
 
I have a folder containing around 2000 something PDF documents and the OS X built-in Spotlight Search does a good job in searching keywords.
