I'm based in an EST time zone... Today, while in CENTRAL (1 hour behind) i started making meetings for the morning. I set all meetings to 5am EST- 6amEST, ECT..

When i set my calendar to update yo my current location, it MOVES all my meetings back an hour to match my time zone.. Now, I get it. If i say I have a 9pmEST call, and i move to central, calendar will MOVE the meeting an hour back so I don't miss it.. THATS great,

BUT, these morning meetings are just reminders for me to do things in the morning.. So my question is, how can I set these meetings to ADJUST to STILL start at a certain time (5am) REGARDLESS of my time zone?

On my Mac Calendar events, in Google or iCloud calendars, I can set the time zone to "Floating" if I have time zone support "on" in Calendar preferences. That is what I think you mean.

I don't get that option in my Exchange calendar.
