First thing to check when you have a NMI related kernel panic are the northbridge heatsink rivets, after verifying that you run AHT/ASD.

This wasn't an issue on Big Sur. I just upgraded a week ago. AHT/ASD? Diagnostics? Do I just hold down the D key during boot up?

OK, I'LL TRY THIS. GitHub - upekkha/AppleHardwareTest: Apple Hardware Test Download Links

Like I wrote, NMI is usually related to northbridge overheating. The northbrige heatsink push pins are made of nylon and will fail anytime - it's a 12+ years old Mac Pro, most Mac Pros already had it replaced at least one time by now. Check if the heatsink is still correctly attached before running AHT/ASD or you can burn the CPU tray while running the tests.

You need to reinstall AHT if the Mac Pro was ever clean installed, it's only available with the factory installed image:

AHT/ASD:
You need to run AHT and ASD (since it's a MP4,1>5,1, you'll need to run mid-2010 versions) to find what is causing the KPs/crashes that are being stored as PanicLogs inside your Mac Pro NVRAM.
You need an Apple OEM GPU (HD 2600XT, 8800GT, Quadro FX 5600, GT120, HD 4870/5770/5870) to run AHT/ASD. AHT/ASD can be used with PC flashed GPUs, but will fail mid test when the GPU sensors are checked. Non flashed PC GPUs won't work at all. You need to boot completely vanilla, no OC, to use AHT/ASD.
You can get AHT links and instructions on how to install it on this GitHub article.
AHT, you need 022-4831-A.dmg:
The ASD version that you need is 3S149. The AHT instructions are valid for creating an ASD USB key and Apple provides an installation PDF with it.
ASD, you need 3S149:
For people that have an early-2009 cross-flashed with MP5,1 firmware, you will need to run the MacPro5,1 versions of AHT (022-4831-A) and ASD (3S149).

OK, so I followed the link and used the specific 5,1 AHT .diagnostics file. It came up clean. But, yes I noticed that it didn't detect the GPU. I flashed the ROM on the GTX 680 myself. Do you have any images of the push pins? Not sure what I'm looking for.

Did you checked the push pins/rivets? Unless the heatsink is completely loose your CPU tray will not overheat with the normal test, even more so in winter time.

There is a long thread about the northbridge push-pins/rivets, use the search.

Is this what I need to do? Seems a bit complicated. Mac Pro Single CPU Northbridge Heatsink Repair - iFixit Repair Guide

Is running Monterey on a CMP 4,1/5,1 not recommended?
So, just wanted to update everyone. Since disabling the mediaanalysisd process, my Mac has not frozen or rebooted in a few days.
