I think that the hexacore is reasonable because five years from now...
Buying a computer today for software you expect to be running in five years seems optimistic to me. No matter which Mac Pro you buy today you'll certainly want something better and faster in five years.

Possibly in the next two years we will be there

Wow, I just noticed Intel makes dual socket hexacore CPUs that operate at 3.33GHz!

The 3.2 Quad is a good choice in my opinion. I have last years 2.93 Quad with 6GB and SSD storage and it is blindingly fast and I can't really stress it out with Aperture, CS5, or FCP.

It's true, the Sandforce SSD's are currently the best all-around choice (OCZ or OWC) due to their good random and sequential performance as well as their robustness under heavy use, but it's not true to say they shame Intel. While they do have better write performance, let's keep in mind that the most important performance metric for an SSD on an Apps/OS drive is random read performance, something the Intel's were designed specifically to excel at...

Is the corsair on top the best choice then? (what about for macs?) Is the 64GB version of it as powerful?

Were you referring to the crucial C300 drives?

If so, the smaller C300 drives are somewhat slower than the 256. I have the 128GB C300 in my MBP and it benches ~70% as fast as the 256GB version.

I suspect the new OWC SSD's are the current speed champs: http://eshop.macsales.com/item/Other%20World%20Computing/SSDMX120/
I have NO personel experience with the OWC drives but they have a lot of fans on this site. That said, I've been VERY satisfied with the C300 drive.

ciao baby

That chart shows 4KB reads...instead look at that whole article. For macs best choices are OWC, OCZ vertex 2 series and Intels. OWC and OCZ use sandforce 1200 that has a hardware garbage collection thus eliminates need for Trim support that Intel and other brands require to prevent degradation of their drives, while being on top of the charts speed wise.
