You won't know for sure? See the order after it ships on the Apple site. There is a form there and a button to print it out so you can leave the form at the door with your approval to leave the shipment without a signature. If your carrier doesn't need one in your case normally, anyway, that's between you and them.

With my 5S the tracking number said signature required but my delivery guy just left it at the door. My 6+ delivery required my signature.

Does anyone in Canada know what'll happen if no one is able to receive it? I imagine if it's delivered by Canada Post it'll go to the nearest post office.

It'll be shipped by UPS or Fedex in Canada if it is coming from China. You'll get a card on your door saying they will make another attempt. (If you know your not going to be home get fedex or UPS to hold it at their depot and pick it up with your photo id)
