I have a mac mini running with 2 NICs. I would like to run a VPN client on 1 nic and the 2nd nic for just ISP. Basically I want all downloads and etc to go the VPN but I want my PLEX server to go through the non VPN interface. Is this something that is even possible?
 
Not sure I fully understand your use case. You want internal network traffic and outbound traffic from plex, not to be on the VPN and all other outbound traffic to be over the vpn?

Well it seems Plex cannot be manually told which adapter to bind to. You might want to check which adapter it is binding to (find the PID and use netstat to check what it’s listening on) and set up routing on the other interface.

Even then it sounds like it might be a bit of a challenge.
