Will the new 21.5" iMac coming out this month work as an external monitor for my Xbox360? I've heard about these devices before

I don't need it for the capture card, I just want to use my Xbox360 on my iMac plain and simple. I'm looking for a cheap option, but I'd like options that wont have any lag, lengthen the response time of the display, and keep 1920x1080 resolution.

I don't think that's feasible right now. With the 2009 and 2010 27" models you could do it with the Kanex XD HDMI to Mini-Displayport adapter.

2011 (and presumably 2012) models can only work as a display for Thunderbolt devices (ie other Macs with Thunderbolt ports).

It's possible that some company could create such an adapter for the Thunderbolt iMacs but as far as I know there isn't one available yet.

Most likely the new iMacs will still be restricted to Thunderbolt connections for video in. an iMac is an awfully expensive for just an external monitor.
