No doubt, there is something going on with iTunes and how it's using "backup"

I right clicked my phone via iTunes and selected "backup iPhone" before doing anything.
It took a while but said it was complete.
I also regularly plug in and let iTunes "backup"

I just got a 4s and restored from a backup instead of " as a new phone" and it showed my last backup being from 2010!!
With no other dates on there.
I figured I had backed up so many times it should be fine.
Nope
Everything reverted back to how my phone used to be.
Old apps, unorganized, etc.
It's no biggie I got everything back but I am
Watching everyone at work go through the same thing.
They backup then restore the new 4s from a backup and they all lose a bunch of stuff. Apple sure didn't make this easy.
Anyone know a work around so I can pass it along?
