Can you use the new AirPods Max with USB-C with a headphone jack? I often need to do this with my Apogee Jam for my guitar. Apple sells a lightning to 3.5 mm audio cable, but I do not see an equivalent USB-C version.

As already asked here, it's currently pure speculation:
Although the only connectivity listed in the specs is 'Bluetooth 5.0', it was the same for the Lighning version.
Apple has not yet updated their 'Lossless Audio' page:
