Hi,

I got a new Apple Watch and this time I want to setup this watch as ’new’ instead of restoring from a backup.

I know the way how to do it, but what about the old watch. What’s the best way in doing it? First unpair old watch, then take new watch and pair it as a new watch and setup everything from scratch?

Don’t wanna loose all my old fitness data.

Hope to get some tips.

Your fitness data should always be saved on your iPhone rather than your watch.
You can have multiple Apple Watches paired To the same iPhone, but multiple iPhone cannot share the same Apple Watch.

So it doesn’t matter how I setup the new watch if I understand it correctly?
 
you can set it up a new or restore from a backup - my recommendation is to setup as new though. that way you get to explore all the settings ...
your old watch - you should do the un-pair if you want to restore the new one from backup (un-pair actually creates a backup).
But if you setup the new one as new, it doesn't matter, you can pair up to 5 watches to your phone

Or first Setup the new one, pair it to my iPhone and delete the old one later?

Or does it just don’t matter?

it doesn't matter ... I have 3 watches paired to my phone

I have never used multiple watches simultaneously before, but you can select The main source of your health data being your new watch, so its sensor takes priority writing data. You don’t even need to unpair the old watch if you don’t want to.
I would not say “doesnt matter how I setup the new watch”. Always read the fine print.
