Hey, sincere apologies if this has been asked before, as I hazard it might be.

I have just upgraded my old iPhone 3 to a iPhone 4s. Backed up the contacts and Apps on my iTunes.

I only discovered that the OS is long out of date so the iPhone will no longer sync to the old iTunes.

I've ordered a newer version of Mac OSX to rectify this. BUT in the meantime while I await delivery of the disc can I set it up as a new iPhone so I can use it and recover all my contacts and Apps later once I have the new OS installed?

Yep, you can restore from a backup anytime at a later date or alternatively download your contacts on your new phone from an Exchange/Gmail account if you have them on there.
