It's probably the force touch display. It's thicker than the display on the 6/6+.

Maybe a combination of the and increased battery size?

Added another speaker, possibly added additional home button hardware (haptic/taptic whatever it's called), larger battery etc...

comparing the plus models, they are the same size but the 7 plus is 4 grams lighter

Different display and possible new battery technology (i.e. higher density) which could be ready for mass production by next fall may help with that.
