Hello. I order my new phone off the Apple site and I got an update a few days ago that it’s shipped. I checked the tracking today and it says it’s coming from China. I don’t know why I was surprised by that, but I was. I don’t think my new iMac shipped from China and maybe that’s why I was surprised. I just wanted to make sure this is normal. Thanks.

Yup, it ships direct from the factory.
Yes, usually ships from the factory, but around this time, Apple should have it fully stocked in their warehouses. But if the warehouse doesn't have the one you want in stock, then they just ship directly from the factory.

Nothing to worry about.
Apple's new procedure is to try and ship to customers using local stores etc. so they can get their product faster. And when that is not possible, (due to the pandemic etc.) shipments will come from China.
