How much energy does an apple silicon mini use when it’s “asleep”..? I’m assuming “not very much”?

As long as you don't mind the $ of the electricity. It could range from the trivial (7W per hour) to significant - > $1 a day depending upon electric costs and if the system is maxing out when left on.
 
I have security camera software that ran 24/7/365 on a 2012 Mini then a 2014 Mini and now runs on a M1 Mini, all were connected to a UPS, no automatic updates. The only problem I have on the M1 is external raid software that is not native to M1 and runs via Rosetta 2 that has a big memory leak. So I reboot once a month when the process gets above 1GB memory utilization.
 
Just be aware of the electric cost. My Studio at idle is using 30 watts of power. Thats $10 a month wasted if I left it running all of the time with my electric rates.
Is that right? What's the calculation? 30 watts in to a kilowatt takes 30 hours. So that's 24 kilowatt hours in a 30-day month. A kilowatt is about 14 cents on average, so that's $3.36 a month.

Green Mountain Power quotes $0.18035 per KWH but then tacks on a bunch of other surcharges including an Energy Efficiency surcharge of $0.01087 per KWH, as well as a flat daily fee (Customer Fee) of $0.526 per day and three additional $1.50 - $2 per month flat fees for storm restoration, major storm adjustment, electric assistance program. So how the heck am I supposed to know what I'm *actually* paying per KWH?

Nobody in Vermont thinks our electric rates are bargain rates; we think they are pretty darn high. But your $.40 per KWH would suggest they are a relative bargain. To be fair, given the weather here in the winter, GMP is to be commended for how quickly they restore power following an outage. So I don't begrudge them the fees.

Do you NEED to leave it on all the time?

Since I started using Macs (in 1987), I keep the Mac (and peripherals) plugged into a power strip.
Each night, I power everything off (including the Mac).
And then, for an extra measure, I reach down and TURN OFF the power strip.

In the morning I turn the power strip back on, and press the Mini's power on button.
This routine has worked for me, for 36 years. Guess it will work "until I'm done"...
If I do that my Mini forgets about the display (LG 5K) and it can take ten minutes to get them talking again.

7W is when idle, sleep should be much lower.
