On this I'm being told to wait if I'm buying a Macbook Pro. My budget is £1000, will the old ones go down in price / will the new ones be much more expensive?

You'll be in the '10 MBP 13" range out the door. Not a bad deal. Apple "refurbs" tend to be open box items that people that didn't do their homework open up and take back the next day. They are almost always flawless and qualify for the same Apple Care (plus come with 1 year).

+ 1 Refurbs all the way for me. The only time I buy new is when I need to have the latest toy the first day that it comes out.
