does anybody know what the symbol is for in messages? Its the one that looks like a moon.

My guess is that it is meant to indicate the person has Do Not Disturb turned on.
 
You have Do Not Disturb turned on for the message, not the global Do Not Disturb. Click on details when in a message and you will see an individual Do Not Disturb toggle - so you can mute the conversation

I didn't know this was an option, and I still don't see how to do it. Sorry, do you mind walking me through this? I can't find any "details" or options to click on when in the message view.

EDIT: Never mind. I just realized this is in the iOS 8 section. Sorry for the confusion.

That's pretty neat; I didn't know about that either.
