My time capsule (bought around 2007) finally had its hard drive crap out recently and eight years later I think it is time to get a new one rather than worry about getting the old one fixed.

The only thing is I see the newest time capsule is already a few years old, and does not allow for backing up iPhones connected to it.

I would like to be able to backup not just my computer and my girlfriend's computer, but also our iPhones wirelessly through a hard drive attached to a router.

Is the best thing to do just wait and hope for a new time capsule to be released in 2015? I tried researching but it appears there is no new time capsule in the pipeline about to come out from Apple (or at least they aren't talking about it).

Or is there an alternative to time capsule that would accomplish what I want? Does anyone have experience connecting a hard drive to a regular router or airport?

iOS doesn't backup to a hard drive. It only backs up to either iTunes or iCloud; not directly to a storage device Apple or otherwise.

No direct backup to TC for iPhone.

However, you may backup your iPhone to iTunes via Wi-Fi, and let TC backup those data in iTunes.
