Hello mates :

Just purchased a g5 2.5 Quad Power Tower -
just the tower - no display

can I use my g4 Power book as a display till I find the display I want ?
What cable will I need , if I can do this ?
or what options do I have - wish to stay with an Apple Display
I know where I can find a very reasonable old cinema display - I think is not a DVI connection - an adapter will have to be used no? if I decide that route - only if Laptop cannot be used as display - just to check the machine out

No, you cannot use your PowerBook as a Display for another computer. However, nearly any display will work, a cheap CRT at a local thrift store would be suitable until you get a new one.

If it is one of the Cinema Displays made of clear plastic, then you just need a DVIvalator or DVI->ADC converter to use it. If it is made of aluminum, you just need to connect it. Otherwise, a DVI->VGA adapter will make the connection.
