New watch and new iPhone how to upgrade

Getting both a new iPhone and Apple Watch.

Should I unpair the old Apple Watch before setting up the new iPhone or should I just leave it paired to the old iPhone and will it automatically transfer to the new iPhone when I set up and transfer all my settings?
