I went through the Provisioning/Certificate setup assistant on Apple's dev site, but when I run my project in XCode, it just opens the simulator and doesn't install the app. I realize the issue could be a number of things, but does anyone have suggestions on things to check first?
 
On the top left, It says your APP name, and right next to it, it probably says:
"iPad/iPhone Simulator 4.x.x"
Click it and change to "Iphone/iPad name that you gave your device".
If it's not recognized, it could be because your app is build for 4.2.x++ only, and your device is running on a lower iOS system (but I think they changed that, by overriding it).

Btw, sometimes you have to quit XCode to get it to bind in your changes. This is asinine, but so be it.
