Like on iOS, there are same applications, I will simply never use. And, iOS now gives you the opportunity to uninstall those applications.
I have tried a few times now to uninstall the likes of News, Podcasts, Stocks, etcetera, and cannot seem to achieve this.

To confirm, can 'default' applications be uninstalled?
 
In principle, you can only uninstall iMovie, Garageband, Pages, Keynote and Numbers. When you clean install macOS those apps are actually not included and you have to download them from the App Store.

Other apps you can only uninstall with Terminal commands or by using third-party apps.
