Not sure what's happened but my NFC Tag Reader option is missing on my iPhone 11 Pro Max iOS14, its not there as a Control Center option (even as an add feature option) and its no longer an option in Home Automations as a trigger.

Any suggestions?

Same here - it's there on my old work iPhone 7, but not an option to add in Settings -> Control Centre on my personal iPhone 11 Pro. Only the QR Code Reader option is there.

Yeah, for all iPhones from iPhone XS upwards you can just hold the iphone to the nfc tag. No need to trigger it trough control center.

On my iPhone 8 (iOS 14.2 beta 4), I can choose the NFC Tag Reader in control panel.

On my iPhone Xs (iOS 14.1) this is not an option at all. Can't see NFC Tag Reader in control panel.

Why can't it be added on iPhone Xs? I understand what's written above, but I'd like to pull it up without having it activated by an NFC. I guess not a possibility, or?

It's because the NFC Reader on the newer iPhone models (XR/XS and newer) is a passive reader. So technically, it can't be switched off, and there's no need for the Control Centre toggle.
