I'm having an odd problem. I have an Iphone 6s new with ios 9.0 on it and I've tried to put my Iphone 4s backup on it and i'm stuck at "swipe to upgrade". I want to restore the phone to ios 9.0 without updating to 9.2.1 so I can keep my jailbreak options open. It's possible?
 
No it is not possible. You can only restore to a version Apple is signing and right now that's 9.2.1.
 
Okay, explain like I'm five. Why would anyone attempt to install a 4S 32 bit backup onto a 6S 64-bit device? Besides the screen resolution differences, isn't that like trying to install a Ford Pinto rear seat into a Ford F-150 Crew Cab pickup?

To restore messages, photos, app data, settings, etc.

Your backup isn't restoring anything that's specific to the old phone hardware, it's just the user's data.

^^^Exactly. Firmware (iOS version) is separate from user data, which is the only thing a backup stores.
