I don't know is this just a carrier (Verizon) issue or an issue with my phone. Of course, both sides just want to blame each other. I've been having issues lately with my 17 Pro Max where it basically acts like it doesn't have internet access when on anything but 5G. I could have full bars of LTE, but nothing will load. I can't access websites. The weather won't load. Even iMessage struggles. The only way I can fix it is to toggle airplane mode to get the phone to go to 5G. Why would it not still have data when on LTE?

Have you tried to reset network settings and see if that helps?
Yes. I think I noticed something else yesterday. It happened when I went from wifi to cellular. I left the wifi area, and then instead of connecting to 5G, my phone only went to LTE. It was stuck on LTE until I toggled airplane mode to get it on 5G.

Maybe it’s a problem with the radio in my phone or an iOS issue not switching correctly. Still, I don’t understand why I’m not actually getting data even when it’s on LTE.

What plan do you have with Verizon?

FWIW, at my worksite, LTE data isn't usable on my roaming eSIM (on iPad) connected to Verizon but LTE data works when I'm at home. Meanwhile, my Verizon work SIM functions just fine on both LTE and 5G.

I'm guessing the Verizon LTE network is just too congested at work and the roaming eSIM is massively de-prioritized so it can't get data at work.

Are you on iOS 26.5.2? I have noticed a few bugs on my iPhone 16 Plus and M5 iPad Pros since downloading the update this week.

For people that want to default to 5G to solve this: Settings > Cellular > Cellular Data Options > Voice & Data > Make choice. My 16e (iOS 26.5) defaults to LTE, but was easily changed to 5G.

I am now, but it was doing this before.
(And it continues to do it on 26.5.2.)

That doesn't really fix the main issue—the phone seemingly not having an internet connection on LTE, regardless of signal strength.

Try turning off Wi-Fi Assist in your Cellular Settings and turn off Wi-Fi Calling in the settings for your number/line. This should keep phone from trying to use Wi-Fi for anything if there's a cellular issue. Dumb question: Have you tried just turning off Wi-Fi while on LTE instead of toggling Airplane Mode? Do you have more than one SIM? If so, make sure your primary number (or the number you prefer) is selected for Cellular Data. Disable Allow Cellular Data Switching so it only uses your primary number (part of troubleshooting process, it should work fine with two SIMs if you have them). Also try changing the settings for Voice & Data from 5G Auto to 5G On to LTE and see if that makes a difference.

P.S. I'm using Verizon and I routinely change from 5G Auto to LTE when I'm in certain parts of the Sierra Nevada mountains around Lake Tahoe. Some areas get better LTE coverage or 5G is unavailable. I go with the LTE setting to improve battery life (which is already great on the 17 Pro) since the 5G/5G Auto settings use more battery for me.
