mine starts from 512.
 
Could be location-specific? It's available in the Canada Apple online store.

Not quite true. If you choose the upgrade standard config path on Apple's store website you automatically get 10-core and 512 GB but you can start from the first link and choose the 10-core and still get the 256 GB SSD on config to order.
 
Yeah, when I pulled up the buy page, the 8 core GPU is still starting off with 256GB. the 10-core GPU defaults to 512GB storage.

That does seem to be the case here where if you selected the one for 8 / core, you do have that option there but not on the other one.

It was the same way for the m1 airs as well. If you opted for the 8 core vs 7 core gpu, or was bumped to the 512
