The same problem here.
After first setup my S5 44mm updated to 6.0.1
While my wife’s S5 40mm said the 6.0 is the latest version and no update available. Tried to reset and unpair - no luck...
 
Same here. Brandnew S5 shows no 6.0.1 and my wife's S3 which was showing 6 all the time during holiday was yesterday only showing 5.3.2.
so I also believe Apple has some problem or pulled back the release.
 
My replacement Ceramic was ordered shipped from China over the weekend as a priority order and cane with IOS 6
it arrived on Thursday and I upgraded it to iOS 6.01 with no issues so it must be a server issues over the last 48 hours

I have paired my series 4 GPS plus cellular watch with iphone x on ios 13.1.2
However I do not get WATCH OS6 as an available update for watch.
My watch updates to OS5.3.2 only:(
 
There’s been a ton of recent reports of Apple’s watchOS update server not responding correctly... people unable to update from 6.0 to 6.01 as well.

Still waiting on a good response from Apple.

I would keep checking back. I have the same watch that you have and mine is updated to watchOS 6.0.1. The “up to date” message you’re receiving could also be a glitch.
 
Same for me...I have an XS running 13.1.2 and just tried to update my AW4, but can only get 5.3.2. I wish I had checked this forum before spending a lot of time resetting and unpairing and re-pairing my watch 🤨
 
Had same issue on brand new Series 4, today it is showing for me. OS 6.0.1
 
Message popped up on my phone saying I was using an unpaired watch. Had to set up my watch like new and now 6.0.1 update is showing. Must have been server issue as mentioned earlier.
 
Finally showing up. Looks like they flipped a switch overnight.
