The update that came last week, it's not coming up for my iMac Late 2015 5K and some apps are no longer compatible because I updated them - how do I force the update? When pressing look for update nothing comes up.

Suggest you get out of the Beta version. Is it running on a partition or is it the boot system?

You download macOS Sierra from the Mac App Store. And install like regular. Your things should stay in place, but make a backup just to be sure.
