I was curious what you guys thought about ram chips for a Mac Book Pro Core duo that come from some place like memorytogo.com?

What is the max that my laptop will accept? Could I use a 2gig chip?

intel macs aren't nearly as finicky about their RAM as were their PPC forbears. It's quite easy and affordable to go the third-party route these days.

Can't speak for memorytogo, but I've had good experience (as have many others on this board) with macsales.com (aka Other World Computing).

crucial is guaranteed to be compatible

now MBP's can hold 4gigs according to the official specification

but I have heard from that they can actually handle 8gigs, it's just that 4gig module is very rare and/or extremely expensive right now, so it's not considered an option.
