I'm really excited by the new SE,
and although I've been an iPad user for over a decade, this will be my first iPhone.

As such, I don't have a phone-based carrier account,
so I can't order the "PREPARE FOR CARRIER ACTIVATION NOW" option.

I'm gonna use a different carrier for the "SE" [Verizon] than I use for my "iPad Mini 5" [AT&T]
so here's my noob question:
do I hafta go to an actual brick & mortar Verizon store to "get an activated SIM",
or can I do this online somehow? Thank you! 🙂👍🏻

You should be able to do it online. In the configuration screen there should be a place to select which carrier you want.

Yeah, but it says I'll hafta physically insert an "Activated SIM".
Can I do that online ...? Thank you.
