Where are the backups kept? I looked in my iTunes, but only saw Music, Movies, Books, Podcasts, etc. I'm hoping to find an old notepad note that is no longer on my iPhone.

The notes I take on my iPhone are backed up on my iBook g4 in Mail under the Reminders column located on the left hand side of the application... I would think yours are backed up there, as well.

I'm backing up via iTunes 10 to a MacBook running Snow Leopard. I'll check your solution out tonight, thanks.
 
If you were syncing regularly then if it's deleted from your iPhone it will have gone from Mail/Outlook when you synced. Guess you may be able to do a restore to an earlier point with iTunes and see if you can find it, but restore didn't bring back my friends notes when she got a replacement for a damaged iPhone (have just bought her MobileMe for next time she breaks her phone, but again MobileMe won't help if you've deleted it)

That's _not_a backup. It's simply where they appear on your computer.
