Notes NOT Synching...Help!!!

So yesterday, the 'Notes' on my iphone were not updating.
I tried to fix the issue by:

Going to settings > Apple id > icloud >then toogled the green button off for notes
I Was prompted with a warning message, "Are you sure you want to turn off notes? If you turn off notes, these changes will be lost."
I clicked 'Delete from iPhone'

Since then, ALL notes are gone from my iPhone and I cannot seem to get them back.
However, I was able to still access notes on my mac and iPad AND when signing in on the web.
I tried playing around with some settings on the mac, now I can't get any of my Notes my Mac!
HOWEVER I can still get the full catalog of notes on my iPad AND on my iCloud web account.

WTF happened and how I can fix this?

Notes and Mail have been glitchy about updating the last few days. Might be an iCloud server issue. With all the crap Apple has turned out in the past two years, nothing surprises me any more. However, after waiting a while the Notes and Mail eventually update on all my devices.

You turned off iCloud syncing for Notes on your iPhone. Did you turn it back on? If you don't turn it back on it won't show the Notes stored in iCloud.

I turned it back on, nothing happened until today, it took like 12 hours but it finally has updated on my phone.
On my mac though, nothing...

Is anyone still having issues with Notes syncing? I just updated my phone to iOS 15 and now the notes are not synced with iCloud. I toggled the button off and got the same warning about deleting notes from my phone, and when I toggled it back on it won't download the notes (or it will download 1/3 of them and then stop). I've repeated the toggle off-toggle on process many times and it still won't download, although the notes are up to date on my MacBook and in iCloud.

I only have iPhone (on iOS 15.1) and iPad (on 15.2.1). Occasionally I will create a new note / edit an existing note and, when I open the Notes app on the other device, despite the sync wheel going round it doesn’t update to show the new note/changes. I find that if I just kill the Notes app (swipe it closed from app switcher) on the device it hasn’t updated on then reopen it, it will sync on reopening and the Notes will now be updated and in sync across both devices.

Sometimes. My Notes don't always sync from my iPad to iPhone, but they do the other way around. I'll go into the note on the iPad to make an edit and it forces the sync. It's pretty annoying. Both running 15.2.1.

Bit of a pain, especially if you use ApplePay but log out of iCloud and back in on all your devices. Something isn't syncing correctly with your iCloud. With good data an unlock device should sync within seconds, minutes at the very most....
