Fairly new to the watch (5th gen). I've tried various settings permutations, but I want to be able to get email and text notifications (primarily haptic) on my watch, and sound & vibrate on my phone while both are in use. Am I missing a settings trick on this one?
 
You aren't missing anything; it's working as intended. Apple believes that if you are wearing your watch then there is no reason to get notifications on your phone.
 
The problem is primarily that I don't get the usual haptic that I get from calendar events or texts with my emails. And that's what I need. Is there a fix for that? I believe my settings are correct.
 
All I could do was enable Do Not Disturb on my watch, disable mirroring iphone in watch app settings (so DND on watch doesn't enable DND on phone) and my iPhone will still chime for those noticications and I still get the red dot on the top of my watch. My watch however won't vibrate or chime. You just have to glance and see if the red dot shows right after the moon icon. Best I could do.

I think perhaps it might do both properly if you force your watch on data (or wifi) and have it remotely connect to the paired phone vs using bluetooth. But I've not tested that. I hated the vibrations anyway so I'm glad they stopped and the speaker was never loud enough to hear the watch going off anyway. I also was getting pinged with update notifications that felt and sounded a lot like important texts and since I don't update it was bugging me.
