Would it be possible to copy the Camera app from the 3GS and use it on the 3G to get video?
 
No. The camera app doesn't work on the 3G. (I don't even have to test it to know this.) It's not just the application that makes it possible to record video. The hardware is different. It will not work. Use Cycorder or buy an iPhone 3G S if you want to record video.

In fact, here, try it. Bask in the fail.
