If it's not too much bother, would anyone mind explaining to me step-by-step what happens when you go into an Apple (or O2) store in the UK and take out a new contract?
The last two contracts I've had have been with O2 simplicity online (just needed to purchase the SIM online) and the previous iPhone (even easier), so I'm not up to date on what is needed in-store.

I'm curious because I'm out of the UK for a few weeks and I'm wondering if it's possible to supply my brother with my details, proof of address etc and get them to take it out in my name.

It's unlikely a store would let him take this out for you. Unless the store in question is desperate for a sale.

The process is you need -

Proof of Id - Passport or Driving Licence
Proof of address - Utlity bill (Within last 3 months)
and a credit check done on your name.

No more than what I expected, really.
I do wish O2 had their online ordering on, it'd make life so much easier.

The upgrade shop is expected to be back up within 1-2 weeks (No exact timescale released though). So your brother could do it then.
