Using OCLP 1.3.0, and I have booted up several times with the following:

I've okayed it and it went through the motions of updating the build, but I got the same warning on the following boot. What's up with that?

Do you have more than one boot drive in your MacPro?
Do you have more than one EFI boot partition when you do an Option-boot?
Make sure that you have updated the Open Core build on your boot drive, and also make sure that build is selected on boot (when you reboot holding the Option key) before you boot to your OCLP system.

You can use my <mount esp from list and show bootloader> tool to show all ESPs with the version number.

The Dumper shows the OCLP version stored in NVRAM

And the <label ESP> script can rename the ESPs for easier identification in the boot picker.

Link in my signature, its all in one package.
